Fall Cooking School

There are just so many yummy fall recipes to indulge in it's hard to choose! So, our answer is to choose them all. We had our first installment of Fall Cooking School today with great success. C-11 made Pumpkin Pancakes that were super yummy! We had a variety of toppings to choose from; maple syrup, pumpkin butter( my favorite), and M'6's creation~peanut butter/cinnamon sugar/chocolate chips. It was a comforting autumn brunch.

Pumpkin Pancakes

1 1/2 cup flour (We used whole wheat with a little spelt mixed in)
3 Tbl sugar
1 Tbl baking powder
1/2 tsp salt
1/4 tsp cinnamon
1/8 tsp allspice
1/8 tsp nutmeg
(For grins, we added a quick shake of pumpkin pie spice)
1 1/4 cup milk
1/3 cup pumpkin puree
1 Tbl oil

Mix together and cook on a hot griddle.
