I had a mini seder for the girls in my class at church last night. A lot of the girls are gone for spring break, so it was a small group, but it was worth it. I explained the seder plate with lamb shank bone, bitter herbs, matzoh and haorset. We dipped parsley in salt water to represent the tears of the Hebrew slaves. For the dinner I made latkes and macaroons for dessert. I think it was a memorable evening!The macaroons were so delish and very easy to make.

~Coconut Macaroons from Barefoot Contessa Family Style
14 ounces sweetened condensed milk
14 ounces sweetened shredded coconut (I used unsweetened by Let's Do Organic and they were plenty sweet!)
1 tsp vanilla
2 extra large egg whites, room temperature
1/4 tsp. kosher salt (I used sea salt)
Preheat oven to 325 degrees
Combine coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed with the whisk attachment until they make medium firm peaks. Carefully fold the egg whites into the coconut mixture.
Drop the batter by the teaspoon onto a parchment lined baking sheet. Bake for 25-30 minutes, until golden brown.
Delicious warm out of the oven.

We haven't had a passover seder for a few years. Thanks for the reminder. The macaroons look scrumptious!
Yum, Shonda. We've made matzoh crunch today, which is easy, too. We're leaving in a few minutes to go over to the church to finish up Seder prep and make the matzoh-ball soup. We've been doing Seders for years and the smell of the horseradish and the taste of the parsley and the matzoh crunch are all great memories. Glad you could do it with the girls!
The YW activity turned out great, I was glad bishop V. could come in for part of it. The Coconut Macaroons were so good! I think I'll have another one right now:)
