Popovers~


Popovers are one of our all time favorite morning snacks! I've been making them for years and we always love drenching them in butter and lemon curd. Oooh, it is so good! My popovers are always crazy shapes, but it just makes it more fun!

Popovers
1 tbl shortening
2 beaten eggs
1 cup milk
1 tbl oil
1 cup all purpose flour
1. Using 1/2 tsp shortening for each cup, grease the bottoms and sides of muffin cups.
2. In a mixing bowl use a whisk to beat eggs. milk, and oil till combined. Add flour and 1/4 tsp salt; beat till smooth.
3. Fill the prepared cups 1/2 full with batter. Bake in 400 degree oven about 40 mins. or till very firm.
4. Immediately after removing from oven, prick each popover to let steam escape. (We never do this.) Turn off oven. For crispier popovers, return the popovers to oven for 5-10 mins. (We never do this either.)
Makes about 10 popovers in my stone muffin pan, but the recipe says 6.
The lemon curd is from Trader Joe's in the jam section. Yum, yum, yum, yum......

oh my family loves popovers. but wow, did yours ever turn out so lovely. my look really scary. but at least they are yummy.

mmmmmm....popovers. never tried them with lemon curd, but it sounds delicious! do you make german pancakes? yum.

KC, I never have, but my sis in law does and they are yummy. Do you have a favorite recipe for them?
