Almond Flour Pumpkin Bread~



I have been experimenting with using grain alternatives in recipes. It can be a little tricky, but I have had good results.

The first few times I made this, I did not have coconut flour, but I did have unsweetened organic shredded coconut. I put some in my Blend-tec blender and had coarse ground coconut flour in seconds. These pancakes are hard to flip, so I make them half dollar size. They taste like french toast. Delicious! I bought coconut flour and made them and didn't like them nearly as much. They were very dry. I will continue to make them with a combination of my own ground coconut flour and fine shreds.

Everyone loved this recipe. Too bad almond flour is so expensive so I only made one loaf. There is more texture to this bread which I like.

Easy and quick to make! I used almond butter for mine and maple syrup for the sweetener.


Breakfast Cookies http://comfybelly.com/2011/02/breakfast-cookies/ I need to call these Breakfast, Lunch and Dinner Cookies because I ate them all day. So good and really hit the cookie craving. Sort of like a Pecan Sandy cookie which happens to be my favorite. I made mine with almonds and coconut shreds because that's what I had.
