Puffed Oven Pancake~ Spring Breakfast




This morning I made a new recipe that the kids liked so much I had to make it again for a Second Breakfast. (We are Hobbit fans, after all..)
I only have white whole wheat, so I don't know if this is supposed to puff up more or not. It was puffier right out of the oven, but fell before I took the picture. Puffy or not, it was yummy! We enjoyed it with powdered sugar and strawberry sauce.


(Day 2: See! Now those are puffy! Today was raspberry sauce. Mmmmmmm....)


Puffed Oven Pancake~

2 Tbl butter

3 eggs

1/2 cup flour

1/2 cup milk

1/4 tsp salt


1. Melt butter in an oven proof skillet (I used my cast iron) in a 400 degree oven for 3-5 mins. In a medium bowl beat eggs. Add flour, milk, and salt. Beat mixture until smooth. Immediately pour into hot skillet. Bake about 25 minutes or till puffed and browned. Top with fruit, fruit sauce, powdered sugar or (oh if we only had some!) whipped cream.

Strawberry Sauce~

3 cups fresh or frozen strawberries

1/3 cup sugar
1 tsp cornstarch


1. Thaw berries if frozen. Do not drain. Process berries in a blender or food processor until smooth.

2. In a saucepan stir together sugar and cornstarch. Add berry puree. Cook and stir over medium heat till thick and bubbly. Cook for 2 mins. more. and remove from heat. (Can be made with raspberries, but you need to press the berries through a fine mesh sieve to discard the seeds.

That looks Yummy! We make a recipe called "German pancakes" and they puff up a lot too.

Yum! Those look delicious! I always feel like I've done something special if I cook a nice breakfast. (Guess that shows how often it happens around here. lol)

Way to go. I may have to give this a try. I should probably just show it to Rebecca as she likes to cook breakfast items! :-)
