Potager Make Over

Here is the big picture view of the back yard potager. I am looking straight west in this photo and it gets full sun all day long. The bricks in the middle need to come out. This entire spot is my leach field so shouldn't have hard scape. There is also question of growing food on a leach field. I want to play it safe and only have flowers and herbs. The herbs can be grown for aesthetics and any edible can be planted in a raised planter or container within the planter. I would like, though, to have some dwarf fruit trees as the center focal point of each of the large odd shaped beds. I'm thinking pink lemonade, bay, lime and...?

The potager is smack dab in the middle of the back yard, centered with the house. The chickens and turkeys free range and the dogs storm through but at least they have chased most of the gophers away. The chickens have also done a great job of keeping the bug population down.

There are over 50 pink roses in four beds, hundreds of society garlic plants, and five large Bird of Paradise plants in each of the four beds. There are also some orange day lillies that pop up but not very many.

These two large triangle beds just have society garlic, but two varieties. These beds measure roughly 23 ft by 20 ft.

There are four beds in this shape. They measure 22 ft by 22 ft (left vertical and top horizontal) with a short side of 20 ft by 12 ft. (right vertical and bottom horizontal) The shape creates the X design in the potager as a whole. This bed is the favorite hang out for the chickens and the 100 lb. Labrador lies in his "grotto"  in the middle of the Bird of Paradise when it is hot. It is also his "highway" when he runs down the deck stairs into the back yard so the plants get trampled here. The choices are leaving it as is for the comfort of beast and fowl, or removing the B of P and using planter boxes in the highway spot...

I definitely want all of the other Bird of Paradise gone. I have dug up so many garlic plants, but there are still so many!  Mostly I have rescued the roses that were being choked out. I was thinking of leaving a cluster of garlic at each corner...

 These two beds are 4 ft by 20 ft and full of garlic. All of the gravel paths are 4 ft in width.


My Vision:
* I want a look that is not too formal but not too "cottage garden messy". I want to be able to get into the beds and trim with out being scared of snakes. (We used to have two for sure and probably more king snakes living in the garlic. Snakes are good to have, but I didn't relish the thought of stepping on one while pruning the roses! I think the dogs have chased them away, but you never know.)
*I don't want it too matchy matchy.  The beds don't have to be totally symmetrical or mirror image. I do want it to flow well, though. Maybe having similar color theme/placement, but not the same flowers?
*I want it to look good when looking down from the deck but also interesting while walking through it.
*I think having varying heights would be good. I don't want it to look too flat.
*The house is mission style so I want it to go with the feel, but I want color.
*I have thought about fencing off the entire potager, but don't know how that would look.
We have tree mulch all around the potager.  We are hoping it will keep the weeds down and improve the soil as we want to eventually have grass.
